Today, I have literally spent about 8 hours sitting in this chair on the computer. Mostly because i was editing and posting new items to etsy, but also out of sheer laziness. its like once i sit for so long, it is so hard to motivate myself to get up and move! But i finally forced myself. I got up and cleaned the whole house! That felt good. But now, here i am again. I didnt make a thing today! oh well, tomorrow...
I just walked outside to grab some spinach from the garden and the sky is such a beautiful deep blue and the moon is the perfect sliver, one of my favorite kinds. just a few stars in the sky, and the sillouettes of the trees are all illuminated from the moon. such a beautiful night. wish james was home. maybe we can go on a wet bike ride when he gets home, if it is not raining like crazy. today the sun actually came out. but it has been raining for 4 days straight now, so the ground is still a soggy mush, but oh my are the plants and grass loving it. i wish so badly i would have put my garden in already, man would it be happy! My chard is as tall as violet now!

Lunch menu:
pita with sprouts, red bell pepper, baby bella mushrooms, zuchinni and feta cheese, grilled.
Dinner menu:
spinach and chard (from garden) salad with red onion, feta cheese, dried cherries, and Annie's organic hibiscus dressing.
lets see if i can keep this up!

I feel the same way, I have sat here for the past 3 hours working and now I'm dying to get up. Your lunch and dinner sound yummy, thanks for posting for some inspiration, it's so easy for me to get in a rut with what to have, you ate lots of vegetables today, go you!
Betsy, i get in lots of food ruts. thats the only thing i miss about working at the restaraunt i did, the chef was an amazing cook with highly (almost too much so) healthy food. i ate so much yummy amazing things it was unreal. and now, a year later, i cant seem to pull it together anymore. i think mainly b/c so much energy goes into my business, i dont want to think much when it comes to feeding myself, which is so wrong. i have to stop that! i need to take better care of myself through this, or i will end up like my mommy. thanks betsy, i just love you :)
ReplyDeleteI am loving all these new tops! With each one you put out there I fall more and more in love. They keep getting better and better just when I thought they were so wonderful to begin with! Your food is super yummy. I am just now getting back on track with food as well. It's a lovely and terrible thing all at the same time. I think I need to add some chard to my garden. Thank you for the inspiration on something new for our veggie patch. :)
ReplyDeleteGood eating is always a journey, sometimes it's harder at times than others! I'll always give you encouragement to try to stay on track! Interestingly enough, I ate terrible when I was pregnant because I was so sick, all I wanted were carbs, and I gained 45 pounds (lol) And I had to completely overhaul my diet afterwards, and even more so now that I feel great, I definitely feel a difference. That's so awesome that you worked around a great chef, it's hard for me to be creative, especially with vegetables. I'll post interesting things if I ever come across them :) I just love you as well!
ReplyDeleteKatelyn, thank you so much about the shirts. i love how each one is becoming completely different and unique on its own. i love them so much. we can do this food thing together then! help each other out! you too betsy! i love chard, i never would have known if it wasnt for that restaurant. chard and spinach are the only two things i planted last year that survived all of our freezes, and me giving up and not watering since last season! and my chard looks better than ever! it is amazing! i think i just realized its a fall plant b/c thats when it began to thrive.
ReplyDeleteBetsy, thank you for the encouragement. yes, i have noticed that it is like a rollercoaster. one of my biggest concerns is the fact that i will most likely get pregnant in the next year or so, and i need to change my habits now or I WILL gain a bunch of weight. and it will be so much harder to lose if i dont have that right mindset. that is a scary thing to me. i already see my body changing just from sitting and creating so much. i love working with veggies, although i tend to stick to a certainfew that i really like, but ill try to do more food posts as well for you guys!
