Foodie Post: Eggs a la Goldenrod

My nanna called me after seeing this post to tell me the 'real' name of this recipe, ha ha. This recipe may not be the healthiest, but it sure is yummy. This is something my mom used to make when I was little, and its been in the back of my mind to make for a long time. It was so fun to make, probably b/c I remember helping her. Sometimes Im surprised at the things I remember to do that she taught me when I was little. It just comes back like it was yesterday, even though it was like 15 years ago...

I have no idea what you call it, but its eggs and gravy on toast.

You start by hardboiling some eggs. I did 6 for 2 people, and it was a little much.
And make some simple country gravy for topping.

Then cut up your eggs with the whites and yellows separate, the white in cubes, the yellow nice and fine.
Get some awesome whole grain bread and toast it.
Then you just lay your toast down, top it with the white egg, then gravy (a little salt and pepper), and sprinkle with the yellow! Yummy in my tummy!
And of course, pour yourself some orange juice or something in a fun cup, always makes it better to use a cup you love.

  1. oh and my mom "retaught" me how to crochet in a dream about 10/15 years after she died... picked up that crochet hook the next morning and just went to town! It was great. Hadn't thought about it in years prior to the dream. The finished product was far from beautiful but I love it anyway. Our moms are always with us. I'll think of your mom when I make that egg recipe for my family. Thanks for sharing it.
